  • 1 pound sausage
  • 3 cloves garlic, minced
  • 1/2 cup red bell pepper, diced
  • 2 teaspoons taco seasoning
  • 6 eggs
  • 8 small tortillas
  • 1 cup shredded cheese

  • Chopped cilantro for garnish

Instructions
 

Preparation

  • Preheat your oven to 400 degrees F.
  • In a skillet, cook the sausage over medium heat until browned. Add the minced garlic, diced bell pepper, and taco seasoning. Stir and cook for a few minutes until the peppers are tender.
  • In a bowl, whisk the eggs until well blended. Pour the egg mixture over the sausage, garlic, and pepper. Cook until the eggs are scrambled and fully cooked.
  • Heat tortillas one at a time in a skillet over low heat, or microwave all of them for 30 seconds until warm.
  • Assemble the taquitos by dividing the sausage and egg mixture evenly into each tortilla. Top each with shredded cheese and tightly roll them up.

Baking

  • Place the rolled taquitos seam side down in a baking dish. Bake in the oven for 10-15 minutes, or until the tortillas are slightly crispy and the cheese is melted.
  • Garnish with salsa, sour cream, and chopped cilantro. Enjoy!

Notes

You can customize the filling by adding ingredients like cooked bacon, ham, or veggies. Make sure to use small tortillas to make rolling easier. For extra flavor, consider adding jalapeƱos or hot sauce to the egg mixture. If you make a large batch, you can freeze extras for quick breakfasts later.
