Cooking Pasta

  • Cook pasta according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water for later.

Caramelizing Onions

  • In a large skillet, heat the olive oil and butter over medium heat. Add sliced onions and cook, stirring frequently, until caramelized, about 20 minutes.
  • Look for a deep golden brown color to bring out their sweetness.

Preparing Broth Mixture

  • Once onions are caramelized, sprinkle flour over them and mix well. Cook for another minute.
  • Slowly add broth, balsamic vinegar, thyme, salt, and pepper. Bring to a simmer and cook for another 10 minutes.

Combining Pasta and Sauce

  • Toss cooked pasta in the sauce until well coated. Stir gently to ensure every piece is enveloped.
  • Serve hot, topped with grated cheese and parsley.

Notes
