Ingredients
  

Pasta and broth

  • 200 g pasta Use your favorite type of pasta.
  • 1 cup beef or vegetable broth Vegetable broth for a vegetarian option.

Main ingredients

  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Garnish

  • to taste Fresh parsley For garnish.

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
  • Once the onions are caramelized, add the minced garlic to the pot and cook for another minute until fragrant.
  • Stir in the broth and bring to a boil, deglazing the pot to lift the browned bits.
  • Add the pasta to the boiling broth and cook according to package instructions, typically about 8-10 minutes, until al dente.
  • After the pasta has cooked, reduce the heat to low. Stir in the heavy cream, grated Gruyère cheese, salt, and pepper. Mix well until the cheese melts completely and the sauce thickens.
  • Serve the pasta hot, garnished with freshly chopped parsley.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. For longer storage, freeze in freezer-safe bags for up to three months. Reheat gently in a saucepan, adding a splash of milk or cream to maintain creaminess.
