  • 2 lbs beef stew meat, cut into chunks
  • 2 cups red wine Use a quality red wine for better flavor.
  • 4 cups beef broth
  • 3 carrots, sliced Feel free to add other vegetables like peas or mushrooms.
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add the beef chunks and brown on all sides.
  • Stir in the onions and garlic, cooking until softened.
  • Add the tomato paste, red wine, and beef broth, bringing to a simmer.
  • Add carrots, potatoes, thyme, rosemary, salt, and pepper.
  • Cover and let simmer for 1.5 to 2 hours, or until the beef is tender.

Notes

Serve hot, garnished with fresh parsley. Pair with crusty bread or a side salad. Leftovers can be stored in the refrigerator for 3 to 4 days or frozen for up to 3 months.
