  • 4 large Eggs Flax or chia seeds can be used for a vegan alternative.
  • 1 cup Whole Milk Almond, oat, or soy milk can be used for dairy-free.
  • 1/2 cup Sugar Adjust to taste or use a sugar substitute.
  • 1 tablespoon Vanilla Extract Homemade vanilla extract adds a special touch.
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg Freshly grated enhances flavor.
  • 1/4 teaspoon Salt Balances sweetness.

Preparation

  • Preheat your oven to 375°F (190°C) to prepare for baking.
  • Cut the brioche or challah bread into small 1-inch cubes and place them in a large mixing bowl.
  • In another bowl, whisk together eggs, whole milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined and creamy, about 1-2 minutes.
  • Pour the custard mixture over the bread cubes and gently fold to coat. Let it sit for 10 minutes.

Baking

  • Lightly grease a muffin tin with cooking spray or butter.
  • Fill each muffin cup with the soaked bread mixture, packing lightly but leaving space for expansion.
  • Bake for 18-20 minutes until puffed and golden brown, with a toothpick coming out clean.
  • Allow to cool in the tin for 5 minutes before transferring to a wire rack.

Notes

Serve warm and can be paired with crispy bacon or fresh fruit. Drizzle with maple syrup or dust with powdered sugar for extra delight. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
