  • 4 cups fresh peaches, sliced Use ripe peaches for the best flavor.
  • 1 cup sugar Adjust based on sweetness preference.
  • 1/4 cup lemon juice Freshly squeezed is recommended.

For the Cobbler Batter

  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1 cup milk Use almond milk for a dairy-free version.
  • 1/2 cup butter, melted Coconut oil can be used as a substitute.
  • 1 tablespoon baking powder Ensure it is fresh for proper rising.
  • 1/2 teaspoon salt Balances the sweetness.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix the sliced peaches with sugar and lemon juice; set aside for 10-15 minutes to let the juices combine.
  • In another bowl, combine flour, milk, melted butter, baking powder, salt, and vanilla. Mix until just combined; a few lumps are perfectly fine.

Assembly

  • Pour the batter into a greased baking dish, spreading it out evenly.
  • Spoon the peach mixture over the batter without stirring to create a layered effect.

Baking

  • Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Serve warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

Fresh peaches are usually available at farmer’s markets during summer. Keep the leftovers in an airtight container for up to 3-5 days in the fridge or freeze for up to 3 months. Reheat in the oven for best results.
