Ingredients
  

For the Spring Rolls

  • 8 sheets Rice paper Use large sheets for easier rolling.
  • 200 g Rice noodles Cook according to package instructions.
  • 1 cup Colorful vegetables (bell peppers, carrots, cucumber) Use a mix of your favorite vegetables.
  • 1 cup Fresh herbs (mint, cilantro) Wash and dry before using.

For the Peanut Sauce

  • 1 cup Peanut sauce Store-bought or homemade.

Preparation

  • Prepare the rice noodles according to package instructions, typically cooking them for 5-7 minutes until tender. Drain and set aside.
  • Set out a bowl of warm water for dipping the rice paper.
  • Dip one rice paper sheet in the water for about 10-15 seconds, just until it becomes soft and pliable. Lay the wet rice paper flat on a clean surface.
  • In the center of the rice paper, place a small amount of rice noodles, colorful vegetables, and a handful of fresh herbs.
  • Fold the sides of the rice paper over the filling, then roll it tightly from the bottom to the top, ensuring the contents are secured within.
  • Repeat with the remaining ingredients until you have used them all.

Serving

  • Serve immediately with peanut sauce for dipping, or arrange them on a platter for sharing.

Notes

Best served at room temperature or chilled. Garnish with lime wedges and additional fresh herbs. Store leftovers in an airtight container in the refrigerator within 2-3 days.
