Ingredients
  

Dry Ingredients

  • 2 1/4 cups all-purpose flour Sifted for a lighter cookie.
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened At room temperature.
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tablespoon vanilla extract
  • 1 large egg At room temperature.

Mix-ins

  • 1 cup rainbow sprinkles Gently folded into the dough.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the flour and baking soda; set aside.
  • In a large bowl, cream the butter, granulated sugar, brown sugar, and salt until smooth and fluffy (2-3 minutes).
  • Add the vanilla extract and large egg, beating until well combined.

Mixing

  • Gradually add the flour mixture to the wet ingredients, stirring until just combined.
  • Gently fold in the rainbow sprinkles.

Baking

  • Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until edges are lightly golden. Let the cookies cool for a few minutes before transferring to a wire rack.

Notes
