Ingredients
  

Dough Ingredients

  • 4.5 tablespoons unsalted butter For melting into the dough and for finishing.
  • 2 tablespoons minced garlic For the dough.
  • 3.5 cups all-purpose flour Plus 1 tablespoon for adjusting the dough.
  • 3 tablespoons chopped fresh parsley For the dough.
  • 1 tablespoon granulated sugar To feed the yeast.
  • 2.25 teaspoons instant yeast For leavening the dough.
  • 1 teaspoon fine sea salt To enhance flavor.
  • 1 cup whole or 2% milk Warmed to 110°F.
  • 1 large egg Room temperature.
  • 1 beaten egg For brushing the tops.

Finishing Ingredients

  • 2 tablespoons unsalted butter For finishing.
  • 1 tablespoon minced garlic For finishing.
  • 1 tablespoon chopped fresh parsley For finishing.
  • to taste flaky sea salt For sprinkling on top.

Instructions
 

Preparation

  • Lightly butter the bottom and sides of a 9x13 pan and set aside.
  • In a small pot, melt 4 1/2 tablespoons of butter over medium heat, then add 2 tablespoons of minced garlic. Cook for 1-2 minutes or until fragrant, then remove from heat and let cool.
  • In a stand mixer bowl, combine 3 1/2 cups plus 1 tablespoon flour, 3 tablespoons chopped parsley, 1 tablespoon granulated sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt.
  • Pour in the cooled garlic butter, warmed milk, and 1 large egg. Knead the mixture on low speed using the dough hook until smooth and tacky, about 10-12 minutes.
  • Divide the kneaded dough into 12 equal portions (about 67 grams each). Roll each into a smooth ball, pinching seams underneath.
  • Place the rolls in the prepared baking pan and cover with plastic wrap or a kitchen towel. Allow them to rise in a warm place until doubled in size, approximately 1-2 hours.

Baking

  • Preheat the oven to 350°F (180°C).
  • Brush the tops of the rolls with the beaten egg wash and bake for 20-30 minutes, or until golden brown.
  • While baking, prepare the finishing garlic butter by melting the remaining 2 tablespoons of butter and adding 1 tablespoon of minced garlic. Cook for 1-2 minutes until fragrant, then stir in 1 tablespoon of parsley.
  • Once baked, brush the rolls generously with garlic butter and sprinkle with flaky sea salt. Serve warm.

Notes

For a perfect garlic flavor, always use fresh garlic and adjust the amount to your liking. These rolls can be made ahead of time and reheated before serving.
