  • 2 lbs beef stew meat Cut into uniform pieces for even cooking.
  • 4 cups baby potatoes, halved
  • 1/2 cup unsalted butter Melted for garlic butter.
  • 4 cloves garlic, minced Cook until fragrant.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 2 cups beef broth Can be substituted with vegetable broth or chicken broth.

Preparation

  • In a slow cooker, combine the beef stew meat, halved baby potatoes, salt, pepper, thyme, and paprika.
  • In a small saucepan, melt the butter over medium heat and add the minced garlic, cooking until fragrant.
  • Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  • Add the beef broth and stir to combine.

Cooking

  • Cover and cook on low for 6-8 hours or until the beef is tender.

Notes

Serve hot, ideally with a side of crusty bread or a fresh salad. This dish can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
