Ingredients
  

Main Ingredients

  • 1 lb sirloin steak cut into bite-sized cubes
  • 20 oz cheese tortellini cooked according to package directions
  • 3 tbsp butter divided
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 3/4 cup Parmesan cheese freshly grated
  • fresh parsley chopped, for garnish
  • salt and pepper to taste
  • crushed red pepper flakes optional

Instructions
 

  • Boil tortellini according to package instructions. Drain and drizzle with olive oil to prevent sticking.
  • Season steak cubes with salt and pepper. Heat a large skillet over medium-high heat with olive oil and 1 tablespoon butter.
  • Sear steak bites in batches until golden-brown and just cooked through, about 2-3 minutes per side. Remove and set aside.
  • Lower heat to medium. Add remaining butter and garlic to the skillet. Sauté until fragrant, about 30 seconds.
  • Pour in heavy cream, scraping up any brown bits. Simmer 2-3 minutes until slightly thickened.
  • Stir in Parmesan cheese until melted and smooth.
  • Add cooked tortellini and steak bites (with juices) back to the skillet. Toss gently to combine.
  • Garnish with chopped parsley and crushed red pepper flakes if desired. Serve hot.

Notes

Use freshly grated Parmesan for the best melt. Avoid overcrowding the pan when searing steak to get a nice crust. For a herby twist, stir a little pesto into the Alfredo sauce.
