  • 2 tablespoons brown sugar Adjust the amount of sugar to taste.
  • 1 tablespoon olive oil

  • Heat olive oil in a large pan over medium heat.
  • Add the sliced eggplants and cook until they are soft and caramelized, about 8-10 minutes.
  • In a separate bowl, mix together the minced garlic, soy sauce, brown sugar, salt, and pepper.
  • Pour the garlic sauce over the caramelized eggplants, stirring well to coat.
  • Cook for another 2-3 minutes until the sauce is well combined and heated through.
  • Serve over cooked rice.

Notes

If you have leftovers, store them in an airtight container in the fridge for about 3-4 days. Reheat in a microwave or on a pan until heated through. Feel free to add fresh herbs like cilantro or green onions for extra flavor.
