Preparation

  • Start by washing the baby potatoes under cool water, letting them shine like little gems. Then, slice them in half to ensure they cook evenly.
  • Rub the chicken breasts with olive oil, and sprinkle the Italian seasoning, salt, black pepper, and red pepper flakes all over until well-coated.
  • Layer the halved potatoes at the bottom of the crockpot, creating a bed for the chicken. Place the seasoned chicken breasts on top.
  • Pour in the chicken broth, ensuring all the ingredients are well-coated.
  • Sprinkle the minced garlic evenly over the chicken, then pile on the grated parmesan.
  • Cover the crockpot and set it to cook for either 6–7 hours on low or 3–4 hours on high.
  • After the cooking time is up, check that your chicken has reached an internal temperature of 165°F (75°C), and potatoes are tender enough to pierce with a fork.
  • Carefully remove the chicken and potatoes from the crockpot, and spoon some of the sauce over the top before serving.
  • Garnish with chopped parsley before serving for a fresh touch.

Notes

You can prep the ingredients the night before! This meal keeps well in the refrigerator for up to 4 days. Feel free to make it ahead of time. Leftovers can be used for chicken salad or frozen for later use.
