  • 0.5 cup grated Parmesan cheese Melts beautifully, adding a creamy, savory goodness.
  • 4 cloves garlic, minced Aromatic and flavorful—garlic is the star that ties it all together!
  • 1 tablespoon Italian seasoning A lovely mix of herbs that enhances all the flavors.
  • 1 teaspoon salt Balances the flavors; adjust to your taste!
  • 0.5 teaspoon black pepper Adds a touch of warmth and spice.
  • 0.5 teaspoon red pepper flakes (optional) For a little kick—add as much as you like!
  • 2 tablespoons olive oil Helps to coat the chicken and adds richness.

Instructions
 

Preparation

  • Begin by washing the baby potatoes and halving them.
  • Mince the garlic cloves and set aside.

Seasoning

  • Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes until evenly coated.

Cooking

  • Layer the halved potatoes at the bottom of the crockpot.
  • Place the seasoned chicken breasts on top of the potatoes.
  • Pour the chicken broth over the chicken and potatoes.
  • Sprinkle the minced garlic evenly over the chicken and add the grated Parmesan cheese on top.
  • Cover the crockpot and set it to cook on low for 6-7 hours or on high for about 3-4 hours.
  • Check that the chicken reaches an internal temperature of 165°F (75°C) and that the potatoes are tender.

Serving

  • Gently remove the chicken and potatoes from the crockpot.
  • Spoon any remaining sauce over the top before serving.
  • Chop fresh parsley and sprinkle over the dish for added color and flavor.

Notes

You can prep the ingredients the night before. Leftovers will keep for 3-4 days. This dish also freezes well!
