  • 1 lb salmon Skin on, preferably fresh
  • 1/4 teaspoon black pepper
  • 1/4 cup plain breadcrumbs Can use whole wheat for a healthier option
  • 1/4 cup shredded Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons unsalted butter, melted Can reduce for a lighter version
  • 2 teaspoons minced garlic Adjust according to taste

Preparation

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil and spray with cooking spray. If using an air fryer, spray the basket with cooking spray.
  • Place the salmon on the prepared baking sheet, skin side down, and pat dry with a paper towel.
  • In a medium bowl, mix the breadcrumbs, Parmesan cheese, and Italian seasoning.
  • In another bowl, melt the butter and add the minced garlic, stirring to combine. Add this mixture to the breadcrumb mixture and stir well.
  • Season the salmon with black pepper. Evenly divide the crust mixture on top of each salmon piece, gently pressing it onto the fish.

Cooking

  • For baking in the oven: Bake the salmon for 12 to 15 minutes, or until the internal temperature reaches at least 145°F (63°C).
  • For baking in the air fryer: Preheat to 400°F (200°C) for 4 minutes. Place the salmon with the crust, skin side down, in the basket, and cook until done, checking the temperature.

Serving

  • Serve immediately with your choice of vegetable side dishes such as roasted vegetables, steamed broccoli, or a simple salad. A wedge of lemon adds a fresh burst of flavor.

Notes

Pat the salmon dry before adding the crust to help it stick better. Make sure to check the temperature to achieve the perfect doneness. You can customize the crust with additional herbs like parsley or dill.
