  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese Can substitute with nutritional yeast for a vegan option
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped, for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the potatoes thoroughly to remove any dirt and cut them into wedges, roughly 1-inch thick.
  • In a large bowl, combine the potato wedges with olive oil, minced garlic, Parmesan cheese, oregano, salt, and pepper. Toss until each wedge is evenly coated.

Baking

  • Spread the coated wedges in a single layer on a baking sheet, ensuring not to overcrowd the pan.
  • Bake for 25-30 minutes, flipping the wedges halfway through for even browning.
  • Remove from the oven when they are golden brown and crispy on the outside, tender on the inside.
  • Garnish with fresh parsley and serve warm.

Notes

To store leftovers, allow them to cool completely, then transfer to an airtight container. They will last 3-5 days in the refrigerator or can be frozen for up to 2 months. Reheat in the oven at 400°F (200°C) for best results.
