Preparation

  • In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set this mixture aside.
  • In another bowl, beat the softened butter with the brown sugar until fluffy. Add the egg, molasses, and vanilla, mixing until well blended.
  • Gradually add the dry mixture to the wet, mixing until a smooth dough forms.
  • Divide the dough into thirds, wrap in plastic, and refrigerate for at least 2 hours.

Baking

  • Preheat the oven to 350°F (175°C).
  • On a floured surface, roll out the dough until about 1/4 inch thick. Use a gingerbread man cookie cutter to cut out shapes.
  • Place them on a baking sheet lined with parchment paper and bake for 8-10 minutes.
  • Allow them to cool on a wire rack before decorating.

Notes

For success, chill the dough to help maintain shape. Use plenty of flour to prevent sticking. Get creative with decorations!
