Ingredients

  • 2 cups gluten-free flour blend Ensure it is a 1:1 substitute for regular flour.
  • 1 cup sugar For sweetness.
  • 1/2 cup butter, softened Should be soft for creaming.
  • 1 large egg Room temperature for best results.
  • 1 teaspoon vanilla extract For flavor.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

For the Frosting

  • 1 cup cream cheese, softened Ensure it is softened for easy mixing.
  • 1/4 cup powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract For added flavor.

For Topping

  • assorted fresh fruits (strawberries, blueberries, kiwis, etc.) Use seasonal fruits for best flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In another bowl, whisk together the gluten-free flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture.
  • Spread the dough into a pizza pan and bake for 10–12 minutes or until lightly golden.
  • Allow the cookie crust to cool completely.

Frosting

  • In a separate bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth.
  • Spread the cream cheese frosting over the cooled cookie crust.

Topping and Serving

  • Top with assorted fresh fruits.

Notes

To store leftover Gluten Free Fruit Pizza, keep it in the refrigerator. It is best enjoyed within a few days. If fruits start to wilt, consider removing them before storing.
