  • 1 cup unsalted butter Make sure your butter is at room temperature for easier mixing.
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour blend.
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups chocolate chips Mix of semi-sweet and dark chocolate chips is recommended.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  • In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until combined, then fold in the chocolate chips.
  • Scoop tablespoon-sized balls of dough onto a lined baking sheet.

Baking

  • Bake for 10-12 minutes, or until the edges are set.
  • Allow to cool on the tray for a few minutes before transferring to a wire rack to cool completely.

Notes

Gourmet Brownie Cookies can be served plain or with a dusting of powdered sugar. Pair them with milk or vanilla ice cream. For storage, keep in an airtight container at room temperature for 4-5 days, or freeze for up to 3 months.
