Ingredients
  

For the chicken and bowls

  • 2 lbs Chicken breast Boneless and skinless
  • 2 tbsp Olive oil For marinating
  • 3 cloves Garlic Minced
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tsp Salt To taste
  • 1 tsp Black pepper Freshly ground
  • 1 cup Cucumber Chopped
  • 1 cup Tomatoes Chopped
  • 1/2 cup Red onion Sliced
  • 1 cup Bell peppers Chopped
  • 1/2 cup Feta cheese Crumbled

For the tzatziki sauce

  • 1 cup Greek yogurt Full-fat is recommended
  • 1/2 cup Cucumber Grated
  • 1 clove Garlic Minced
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tbsp Dill Fresh or dried
  • 1/2 tsp Salt To taste

Instructions
 

Preparation

  • Marinate the chicken breast in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  • While the chicken is marinating, prepare the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, and salt in a bowl.
  • Chop the fresh veggies including cucumber, tomatoes, red onion, and bell peppers.

Cooking

  • Grill or pan-cook the marinated chicken until fully cooked and golden brown.
  • Once the chicken is cooked, slice it into strips.

Assembly

  • Assemble the bowls by placing a base of fresh veggies, topped with sliced chicken, a sprinkle of feta cheese, and a dollop of tzatziki sauce.

Notes

Store any leftovers in airtight containers in the refrigerator for up to three days. The components can be stored separately to maintain freshness.
