Ingredients
  

For the Chicken

  • 4 pieces Chicken breasts Boneless, skinless
  • 3 tablespoons Olive oil For marinating
  • 3 cloves Garlic Minced
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 teaspoon Salt
  • 1 teaspoon Pepper Freshly ground

For the Bowl Assembly

  • 1 cup Cucumber Chopped
  • 1 cup Tomatoes Chopped
  • 1 small Red onion Chopped
  • 1 cup Bell peppers Chopped
  • 1/2 cup Feta cheese Crumbled

For the Tzatziki Sauce

  • 1 cup Yogurt Plain Greek yogurt
  • 1 clove Garlic Minced
  • 1/2 cup Cucumber Grated
  • 1 tablespoon Dill Fresh or dried
  • 1 tablespoon Lemon juice Freshly squeezed

Instructions
 

Preparation

  • Marinate the chicken breasts in a mixture of olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  • While the chicken is marinating, prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, dill, and lemon juice in a bowl. Set aside.
  • Chop the fresh veggies (cucumber, tomatoes, red onion, bell peppers) and set aside.

Cooking

  • Grill or bake the chicken until cooked through, about 20 minutes.
  • Once the chicken is cooked and rested, slice it into strips.

Assembly

  • Assemble the bowls by adding a base of chopped veggies, topped with sliced chicken, crumbled feta cheese, and a generous dollop of tzatziki sauce.
  • Serve immediately or store for meal prep.

Notes

Marinate the chicken longer for a stronger flavor. Use fresh herbs for extra taste and experiment with different veggies or grains such as quinoa or couscous.
