Ingredients
  

For the Marinade

  • 3 tablespoons olive oil
  • 1 each lemon juice juice of one lemon
  • 3 cloves garlic, minced
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 each chicken breasts

For the Bowls

  • 1 each cucumber, chopped
  • 2 each tomatoes, chopped
  • 1 small red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • to taste Kalamata olives
  • to taste tzatziki sauce store-bought or homemade

Instructions
 

Marinate the Chicken

  • In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Add the chicken breasts, ensuring they are well-coated. Cover and marinate for at least 30 minutes.

Cook the Chicken

  • Heat a grill or pan over medium-high heat.
  • Cook the marinated chicken breasts for 5-7 minutes on each side or until golden brown and reaches an internal temperature of 165°F.

Prepare the Veggies

  • Chop cucumber, tomatoes, and red onion into bite-sized pieces.

Assemble the Bowls

  • In individual serving bowls, add a generous amount of prepared veggies.
  • Slice or dice the cooked chicken and place it on top.

Add Toppings

  • Crumble feta cheese over each bowl and sprinkle with Kalamata olives.

Drizzle with Tzatziki

  • Generously drizzle tzatziki sauce over the chicken and vegetables.
  • Serve immediately.

Notes

To store leftovers, transfer to an airtight container for 3-4 days. For freezing, keep in a freezer-safe container for 2-3 months. When reheating, use low heat to maintain texture.
