Ingredients
  

For the marinade

  • 1/3 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

  • 8 pieces bone-in chicken thighs

Preparation

  • In a small bowl, stir together the olive oil, lemon juice, garlic, oregano, thyme, Dijon mustard, salt, and black pepper to make the marinade.
  • In a large bowl, add the chicken thighs and pour the marinade over them. Marinate in the fridge for 1 to 2 hours (up to 8 hours for more flavor).

Cooking

  • Preheat the oven to 350°F (180°C).
  • Place the marinated chicken in a baking dish and pour the remaining marinade over the top.
  • Bake for 40 to 45 minutes, until the chicken is fully cooked and registers 175°F (80°C) on an instant-read thermometer.
  • Optionally, baste the chicken a few times while it cooks.
  • For extra crispy skin, turn on the top oven broiler in the last 2 to 3 minutes.
  • Garnish with lemon slices if serving for a dinner party.

Notes

Marinate the chicken overnight for the best flavor. Consider adding a pinch of smoked paprika to the marinade for a smoky taste. Always check the internal temperature of the chicken to ensure it’s fully cooked.
