  • 1/4 cup olive oil Extra virgin olive oil is recommended for best flavor.
  • 2 pieces lemons (juiced) Freshly squeezed lemon juice is preferred.
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley (for garnish)

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Marinate the chicken thighs in the mixture for at least 30 minutes.

Cooking

  • Place the marinated chicken thighs in a baking dish and bake for 35-40 minutes, or until the chicken is cooked through and crispy on the outside.
  • Garnish with fresh parsley and serve with your choice of sides.

Notes

For the best flavor, marinate the chicken thighs for several hours or overnight. You can use skinless chicken but keep in mind that it might be less juicy. Consider adding vegetables like potatoes or bell peppers for a complete meal.
