Ingredients
  

For the meatballs

  • 1 tablespoon olive oil
  • 1 pound 85/15 ground beef
  • 1 pound ground pork
  • 2 teaspoons salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint leaves
  • 1/4 cup finely diced red onion
  • 1/4 teaspoon black pepper
  • 4 cloves fresh garlic, finely minced

For the tzatziki sauce

  • 1/2 cup diced seedless cucumber
  • 2 cloves fresh garlic
  • 1/2 cup fresh dill
  • 1 cup full-fat Greek yogurt
  • Juice of one lemon lemon
  • to taste Salt

Instructions
 

Preparation

  • Preheat the oven to 425 degrees Fahrenheit.
  • In a large mixing bowl, combine the ground pork, ground beef, fresh herbs, onion, garlic, spices, salt, and pepper. Mix everything by hand until well combined.
  • Scoop the meat mixture to form meatballs and roll them in your hands. Place the meatballs on a greased sheet pan.

Cooking

  • Bake at 425 degrees for 15-20 minutes or until the internal temperature reaches 165 degrees Fahrenheit.

Making Tzatziki Sauce

  • For the tzatziki sauce, pulse the cucumber, garlic, and dill in a food processor until finely chopped.
  • Mix this with the Greek yogurt, lemon juice, and salt. Chill until ready to serve.

Serving

  • Serve the meatballs with the refreshing tzatziki sauce.

Notes

Store the meatballs in an airtight container in the refrigerator for up to 3 days. The tzatziki sauce can also be kept in the fridge for about a week. If you want to save some for later, you can freeze the meatballs for up to 3 months. Just make sure to thaw them in the fridge before reheating. Adjust the spices and herbs according to your taste preference.
