Ingredients
  

Asparagus Preparation

  • 2 pounds very thick asparagus, ends trimmed Choose very thick asparagus for a satisfying crunch.
  • 3 tablespoons extra virgin olive oil, divided Use 2 tablespoons for grilling and 1 tablespoon for dressing.
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • 1 tablespoon freshly squeezed lemon juice
  • 3 oz feta cheese, crumbled Store separately for freshness if making ahead.

Preparation

  • Preheat the grill to high.
  • Place the asparagus on a foil-lined baking sheet. Toss with 2 tablespoons of olive oil, salt, and pepper.

Grilling

  • Grill the asparagus perpendicular to the grates for 3 to 4 minutes until browned on one side and still crisp.
  • Remove and let it cool before cutting into bite-sized pieces.

Mixing

  • In a bowl, combine cut asparagus with remaining olive oil, lemon zest, and lemon juice. Toss gently with feta.
  • Adjust seasoning and serve at room temperature or cold.

Notes

This salad is best enjoyed at room temperature or chilled. Store leftovers in an airtight container in the refrigerator for up to 2 days. Consider storing the feta separately to maintain its texture. Variations can include adding toasted nuts or a drizzle of balsamic glaze.
