  • 200 grams Shrimp Fresh or frozen shrimp, peeled and deveined.
  • 2 cups Vegetables (e.g., bell peppers, carrots, broccoli) Chop into bite-sized pieces.
  • 3 tablespoons Soy sauce Adjust to taste.
  • 2 tablespoons Mirin Add for sweetness and flavor.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Sesame oil For stir-frying.

Preparation

  • Cook udon noodles according to package instructions and drain.
  • In a large skillet, heat sesame oil over medium-high heat.

Cooking

  • Add minced garlic and vegetables, stir-frying until tender.
  • Add shrimp and cook until pink.
  • Add cooked udon noodles to the skillet, and pour in soy sauce and mirin.
  • Toss everything together until well combined and heated through.
  • Serve hot, garnished with sesame seeds or chopped green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the microwave or on the stove, adding a splash of water or extra sauce if it seems dry. For a vegetarian option, substitute shrimp with tofu or mushrooms.
