Ingredients
  

Dressing

  • 1 cup mayo
  • 2 TBSP red wine vinegar
  • 1/2 tsp salt
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • Italian seasoning Italian seasoning to taste

Salad Ingredients

  • 1/3 cup pepperoncini peppers, drained
  • 1/3 cup shredded Parmesan cheese
  • 1/2 red onion, chopped
  • 19 oz frozen cheese tortellini
  • 8 slices bacon, cooked and chopped
  • 1 heaping cup grape tomatoes, sliced

Instructions
 

Preparation

  • Cook the bacon until crispy, then drain the grease and chop it into small pieces. Set aside.
  • Boil the cheese tortellini according to the package instructions. Once done, drain and rinse with cold water, then set aside.

Mixing

  • In a large bowl, mix together mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well to combine.
  • Add in the cooked cheese tortellini, pepperoncini peppers, 1/3 cup of Parmesan cheese, chopped red onion, sliced tomatoes, and chopped bacon. Mix everything together until well combined.

Serving

  • Refrigerate for at least an hour before serving. Enjoy!

Notes

Serve chilled as a side dish or light main course. Pairs well with grilled meats. Add extra grated Parmesan on top for an extra cheesy flavor.
