  • 1 pound ground beef You can use ground turkey or chicken for a leaner option.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes Use with juice.
  • 1 can (15 ounces) tomato sauce
  • 2 cups beef broth Vegetable broth can be used for a vegetarian option.
  • 2 cups elbow macaroni Substitute with gluten-free pasta if needed.
  • 1 teaspoon Italian seasoning You can create your own blend if needed.
  • Salt and pepper to taste
  • Grated cheese for serving (optional) Skip for dairy-free.

Cooking Steps

  • In a large skillet or saucepan, brown the ground beef over medium heat for about 5-7 minutes, breaking it apart until fully cooked and no longer pink. Drain any excess fat.
  • Add the chopped onion and bell pepper to the pan. Cook for about 4-5 minutes, stirring occasionally, until the vegetables are softened and the onions are translucent.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the diced tomatoes (with juice), tomato sauce, beef broth, elbow macaroni, Italian seasoning, and season with salt and pepper. Stir everything together until well combined.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20 minutes, stirring occasionally, until the pasta is al dente and the goulash has thickened slightly.
  • Serve hot, topped with grated cheese if desired.
