Ingredients
  

Main Ingredients

  • 1 lb ground turkey Lean protein option
  • 2 medium zucchinis Washed and cut into half-moon shapes
  • 1 tbsp olive oil For sautéing
  • 1/2 medium onion Peeled and finely chopped
  • 2 cloves garlic Peeled and minced

Seasonings

  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes For a spicy kick

Liquid and Cheese

  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese For topping

Instructions
 

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the chopped onion and sauté for about 3-4 minutes until soft and translucent.
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Crumble in the ground turkey and cook for 6-8 minutes, stirring occasionally, until fully browned.
  • Add sliced zucchini to the skillet and cook for 4-5 minutes until slightly softened.
  • Sprinkle in oregano, salt, black pepper, and red pepper flakes, and stir to combine.
  • Pour in chicken broth and simmer for 3-4 minutes.
  • Sprinkle Parmesan cheese on top and stir until melted and combined.
  • Taste and adjust seasoning as desired.
  • Serve immediately.

Notes

Store leftovers in an airtight container for 3-4 days. Can be frozen for up to 3 months.
