Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract.
  • Stir in the pumpkin puree and spices until well integrated.
  • In another bowl, whisk together the flour and baking powder and gradually add to the wet ingredients, stirring until just combined.
  • Gently fold in the chocolate chips.
  • Scoop heaping tablespoons of dough onto prepared baking sheets, spacing them evenly.
  • Bake in the preheated oven for 10–12 minutes or until edges are lightly golden.
  • Allow the cookies to cool for a few minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container for up to a week. Cookies can be made a day ahead or frozen for up to three months.
