  • 12 slices slices of ham Can swap with turkey or bacon.
  • 12 pieces eggs Use large eggs for best results.
  • 1/2 cup mozzarella cheese Can substitute with cheddar or feta.
  • to taste Salt
  • to taste Pepper
  • to garnish Green onions Chopped, for garnish.

Instructions
 

Preparation

  • Preheat the oven to 375 degrees F.
  • Lightly grease a muffin tin and add the ham slices to the cups.
  • Divide the mozzarella cheese among the 12 cups, sprinkling it on top of the ham.
  • Crack an egg on top of the cheese in each cup and season with salt and pepper.
  • Bake for 15-18 minutes or until the eggs are set.
  • Top with chopped green onions before serving.

Notes

These egg cups are great on their own but can be paired with toast or a fresh salad. They can be stored in an airtight container in the fridge for 3-4 days and reheated in the microwave.
