  • 1 can cooking spray For greasing the muffin tin
  • 12 slices ham
  • 1 cup shredded cheddar Can be substituted with other cheeses
  • 12 large eggs
  • Kosher salt To taste
  • Freshly ground black pepper To taste
  • Finely chopped fresh parsley For serving

Instructions
 

Preparation

  • Arrange a rack in the center of the oven and preheat to 400°F.
  • Grease a standard 12-cup muffin tin with cooking spray.
  • Line each prepared cup with a slice of ham and sprinkle with cheddar.
  • Crack an egg into each ham cup and season with salt and pepper.

Cooking

  • Bake egg cups until eggs are cooked through, about 12 to 15 minutes, depending on how runny you like your yolks.
  • Top with parsley before serving.

Notes

Serve warm, delicious on their own or with toast or salad. Can add salsa or hot sauce for a spicy kick. Leftovers can be stored in an airtight container for up to three days or frozen for up to three months.
