Ingredients
  

For the Hamburger Steaks

  • 1.3 pounds ground beef Use fresh ground beef for best flavor.
  • 4 tbsp breadcrumbs Can substitute with crushed crackers or oats.
  • 1 medium yellow onion (grated) Grating helps to mix it smoothly into the beef.
  • 1 tsp salt Use more or less as per taste.
  • 1 tsp black pepper Freshly cracked is preferred.
  • 2 tbsp heavy cream Adds moisture and richness.
  • 1 large egg Best if at room temperature.

For the Dill Sauce

  • 1 tbsp olive oil For frying the steaks.
  • 1 tbsp unsalted butter Adds flavor to the sauté.
  • 1 medium yellow onion (diced) Chop finely for even cooking.
  • 2 cloves garlic (minced) For extra flavor in the sauce.
  • 1 tsp salt Adjust according to taste.
  • 1 tsp black pepper Freshly ground is best.
  • 2 tbsp all-purpose flour Thickens the sauce.
  • 0.5 cup low sodium chicken broth For a flavorful base.
  • 1 cup heavy cream Makes the sauce rich and creamy.
  • 2 tbsp chopped dill Fresh dill enhances flavor.

Instructions
 

Preparation

  • In a large bowl, grate the yellow onion and add it to the ground beef along with breadcrumbs, salt, pepper, cream, and the egg. Mix gently with your hands until just combined—over-mixing can make the beef tough.
  • Divide the beef mixture into four equal portions and shape each into a ball. Flatten each ball to about ¾ inch thick and set aside.
  • Finely dice the remaining onion, mince the garlic, and chop the dill.

Cooking

  • In a large nonstick skillet, heat the olive oil and butter over medium heat. Add the hamburger steaks and cook for 4–5 minutes on each side, or until golden brown. Once done, transfer the steaks to a clean plate to rest.
  • In the same skillet, add the diced onion and minced garlic, reducing the heat to low. Cook until fragrant, about 2 minutes. Add salt, pepper, and flour; stir to incorporate everything.
  • Pour in the chicken broth and let it simmer for 2 minutes, scraping up any delicious brown bits stuck to the bottom of the skillet with a wooden spoon.
  • Add in the heavy cream and chopped dill. Bring the mixture to a boil, then lower the heat and let it simmer for 1–2 minutes until the sauce begins to thicken.
  • Return the hamburger steaks to the skillet and let them simmer in the sauce for an additional 5–6 minutes until heated through and no longer raw in the center.
  • Garnish with more chopped dill and a sprinkle of freshly cracked black pepper. Serve hot!

Notes

For best flavor, use fresh herbs and avoid overworking the beef while mixing. Leftovers can be stored in airtight containers and are great for sandwiches.
