  • 1 lb ground beef
  • 8 oz pasta (elbow or penne)
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese divided
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup milk

Preparation

  • Preheat the oven to 350°F (175°C).
  • Cook the pasta according to package instructions; drain and set aside.
  • In a large skillet, brown the ground beef over medium heat, adding onions, bell pepper, and garlic. Cook until browned and vegetables are tender.
  • Stir in the cream of mushroom soup, milk, Italian seasoning, and season with salt and pepper.
  • Mix in the cooked pasta and half of the cheese.
  • Transfer to a greased baking dish and top with the remaining cheese.

Baking

  • Bake for 25-30 minutes until bubbly and cheese is melted.
  • Let it cool for a few minutes before serving.

Notes

For added flavor, try using different types of cheese, like Monterey Jack or mozzarella. Mix in vegetables like mushrooms or zucchini for extra nutrition. For a spicy kick, add diced jalapeños or hot sauce. You can also turn this casserole into a chili version by adding canned beans and diced tomatoes.
