Ingredients
  

Wet Ingredients

  • 3 pieces ripe bananas The riper, the better! They add natural sweetness and moisture.
  • cup coconut sugar A lovely alternative to refined sugar that lends a delightful caramel flavor.
  • ¼ cup maple syrup Pure maple syrup adds a warm sweetness.
  • ¼ cup non-dairy milk Choose your favorite (almond, soy, oat) to keep the loaf moist.
  • 2 tsp vanilla extract Adds sweet depth of flavor.
  • 1 tsp apple cider vinegar Helps the bread rise and gives a slight tang.
  • 3 tbsp coconut oil (melted) Adds richness and helps to keep the bread tender.

Dry Ingredients

  • 2 cups oat flour A fantastic gluten-free option.
  • 1 tsp baking powder Helps the bread rise.
  • 1 tsp baking soda Adds lift and lightness.
  • 2 tsp cinnamon Warm spice making everything cozy.
  • ½ tsp nutmeg Rounds out the flavors beautifully.
  • ½ tsp salt Balances the sweetness.
  • cup vegan chocolate chips Optional, but adds deliciousness.
  • ¼ cup walnuts (chopped) Optional for added crunch.

Instructions
 

Preheat and Prepare

  • Preheat the oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.

Mix the Wet Ingredients

  • In a large bowl, whisk together mashed bananas, coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar until well combined.

Combine the Dry Ingredients

  • Gently mix in the oat flour, baking powder, baking soda, cinnamon, nutmeg, salt, and vegan chocolate chips until just combined.

Transfer to Loaf Pan

  • Pour the batter into the prepared loaf pan, topping with extra chocolate chips and nuts if desired.

Bake Away

  • Bake for 60–65 minutes, or until a toothpick comes out clean.

Cool Down

  • Let the bread sit in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Slice and Serve

  • Once cool, slice and serve.

Notes

Use very ripe bananas for the best sweetness. Don’t overmix to keep the bread fluffy. Cool completely before slicing to avoid gumminess. This banana bread can be versatile; add nuts or spices if you like.
