  • 4 pieces chicken breasts Boneless, skinless
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese

Roasted Veggies

  • 1 cup zucchini, sliced
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 2 tbsp olive oil For drizzling and coating the veggies
  • to taste salt and pepper
  • 1 tbsp Italian seasoning

Preparation

  • Preheat the oven to 400°F (200°C).
  • On a large sheet pan, arrange the sliced zucchini, bell peppers, and broccoli.
  • Drizzle with olive oil, season with salt, pepper, and Italian seasoning, and toss to coat.
  • Place the chicken breasts on top of the veggies. Season the chicken with salt, pepper, and Italian seasoning.
  • Pour marinara sauce over each chicken breast, then sprinkle mozzarella and Parmesan cheeses on top.

Cooking

  • Bake in the preheated oven for about 25-30 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
  • Serve hot, with the roasted veggies on the side.

Notes

For extra flavor, marinate the chicken breasts in a mix of olive oil, garlic, and herbs before cooking. Don’t overcrowd the veggies on the sheet pan; this will help them roast evenly. Use fresh herbs like basil or parsley for garnishing, enhancing the flavor profile.
