  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 piece bell pepper, diced Any color
  • 1 cup spinach, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup olives, sliced Black or green olives
  • 1/4 cup feta cheese, crumbled Optional

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • to taste Salt and pepper

Garnish

  • to taste Fresh herbs (e.g., basil, parsley)

Instructions
 

Preparation

  • Cook the tortellini according to package instructions, then drain and let cool.

Combine Ingredients

  • In a large bowl, combine the tortellini, cherry tomatoes, cucumber, bell pepper, spinach, red onion, olives, and feta cheese.

Make Dressing

  • In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.

Combine Salad

  • Pour the dressing over the salad and toss gently to combine.
  • Garnish with fresh herbs before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for 2-3 days. Add more dressing when serving leftovers to refresh flavors. Customize with your favorite vegetables.
