Ingredients
  

For the peanut butter mixture

  • 1 cup natural creamy peanut butter (no sugar added) Make sure to use natural peanut butter with no added sugars for the best flavor and health benefits.
  • 1/4 cup powdered erythritol or monk fruit sweetener (or honey/maple syrup) Adjust the sweetness according to your taste.
  • 1/4 cup coconut flour Add more if the mixture is too soft.
  • 1 tsp vanilla extract
  • 1 pinch sea salt

For the chocolate coating

  • 1/2 cup dark chocolate chips (70% or sugar-free) Using dark chocolate that is 70% cocoa or sugar-free is best.
  • 1 tsp coconut oil

Preparation

  • In a medium bowl, stir together the peanut butter, sweetener, vanilla extract, and sea salt until smooth and well combined.
  • Gradually fold in the coconut flour until a thick, pliable dough forms. If the mixture is too soft, add an additional tablespoon of coconut flour.
  • Line a tray with parchment paper. Roll about 1 tablespoon of dough into a smooth ball and place on the tray. Freeze for 15–20 minutes until firm.

Chocolate Coating

  • Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until completely melted and glossy.
  • Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, allowing excess chocolate to drip off before returning it to the tray.
  • Refrigerate for 30 minutes or freeze for 10 minutes until the chocolate is firm.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks. For longer storage, freeze for up to three months. You can add chopped nuts or seeds to the dough for a crunchier texture.
