  • 4 cups corn (fresh or frozen) Fresh corn can be grilled; otherwise, use frozen.
  • 1 cup Greek yogurt Plain variety is best.
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper Can substitute with diced cucumber for variations.
  • 1/4 cup chopped fresh cilantro For garnishing.
  • 1 large lime (juiced) Adds zingy flavor.
  • to taste Salt and pepper Season according to preference.
  • 1 tsp chili powder (optional) For extra heat.

Preparation

  • If using fresh corn, grill the ears over medium-high heat for about 5-7 minutes until charred, then cut the kernels off the cob.
  • If using frozen corn, boil or steam according to package instructions until tender.
  • In a large bowl, combine corn, Greek yogurt, diced red onion, diced red bell pepper, and chopped cilantro.
  • Squeeze lime juice over the mixture and season with salt, pepper, and optional chili powder.
  • Mix well until all ingredients are thoroughly combined.
  • Refrigerate for about 30 minutes before serving for best flavor.

Notes

Store in an airtight container in the refrigerator for 3-4 days. For freezing, only freeze the corn separately.
