  • 1 cup milk For creamier texture, blend some soup before adding
  • 2 tablespoons olive oil
  • to taste Salt Use low-sodium chicken broth to control saltiness

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and garlic, sautéing until softened.
  • Add the diced ham and cook for a few minutes until warmed through.
  • Stir in the diced Yukon Gold potatoes and sliced carrots.
  • Pour in the chicken broth and bring to a boil.
  • Reduce heat and let it simmer for about 20 minutes, or until the potatoes and carrots are tender.
  • Add the milk and season with salt and pepper.
  • Simmer for an additional 5 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

Store in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months. Thaw and reheat before serving. Not to overcook vegetables to avoid mushiness.
