Ingredients
  

For the Muffins

  • 1 cup rolled oats
  • 1 cup cottage cheese or Greek yogurt Choose based on preference.
  • 2 large eggs
  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup blueberries Fresh or frozen.

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a mixing bowl, combine the rolled oats, cottage cheese (or Greek yogurt), eggs, honey (or maple syrup), and vanilla extract.
  • In another bowl, mix the baking powder, baking soda, and salt.
  • Combine the dry ingredients with the wet ingredients until well blended.
  • Gently fold in the blueberries.
  • Pour the batter evenly into the muffin tin.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow to cool slightly before serving.

Notes

Store in an airtight container at room temperature for up to three days. Refrigerate for up to one week or freeze for up to three months.
