Ingredients
  

For the Grits

  • 1 cup grits
  • 4 cups water or broth Use broth for added flavor.
  • 1 cup shredded cheese (Cheddar or your choice) Feel free to use a gourmet cheese blend.

For the Toppings

  • 2 sausage pan-fried and crumbled
  • 2 each eggs (scrambled)
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • In a pot, bring 4 cups of water or broth to a boil over medium-high heat.
  • Once boiling, add the grits, stirring gently. Reduce the heat to low and simmer according to package instructions, typically around 5-7 minutes, until the grits become thick enough to coat the back of a spoon and creamy.
  • Stir in the shredded cheese and mix until melted and well combined.

Cooking the Sausage and Eggs

  • Meanwhile, heat a skillet over medium heat. Add the sausages and cook until browned, about 5-6 minutes. Once cooked, remove from the pan and crumble into smaller pieces.
  • In the same skillet, reduce the heat slightly. Crack the eggs into the pan and scramble them until cooked to your desired level of doneness, approximately 3-4 minutes.

Serving

  • To serve, spoon the creamy grits into bowls, then top with the crumbled sausage and scrambled eggs.
  • Season with salt and pepper to taste. Enjoy your warm, hearty breakfast!

Notes

Serve hot. Pair with sautéed spinach or fresh fruit. Fresh herbs make beautiful garnishes.
