  • 2 cups diced ham
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 leaf bay leaf

  • In a large pot, sauté the onion, carrots, and celery until softened.
  • Add the garlic and cook for an additional minute.
  • Stir in the ham, potatoes, chicken broth, thyme, and bay leaf.
  • Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the potatoes are tender.
  • Season with salt and pepper to taste.
  • Remove the bay leaf before serving.

Notes

Serve hot with fresh bread or croutons. You can add a sprinkle of fresh herbs like parsley for added flavor and color. Store in an airtight container for up to 3 days in the refrigerator, or freeze for up to 3 months.
