  • 1 tbsp Dried Oregano Enhances the overall flavor.

Instructions
 

Preparation

  • Warm up the olive oil over medium heat in a large pot.
  • Add the diced onion and cook until soft and translucent, about 5 minutes.
  • Stir in the minced garlic and cook for about a minute.

Cooking the Soup

  • Add the sliced carrots and chopped celery, letting them sizzle for 5 minutes.
  • Pour in the vegetable broth and the can of diced tomatoes.
  • Bring to a gentle simmer for 15 minutes.
  • Sprinkle in the thyme and oregano, seasoning with salt and pepper.

Finishing Touches

  • Toss in the fresh spinach and stir until wilted.
  • Taste and adjust seasoning as desired.

Notes

This soup is delicious on its own but pairs well with crusty bread or a fresh salad. You can make it ahead and store it in an airtight container for 3-4 days. It also freezes beautifully for up to 3 months.
