Ingredients
  

Main Ingredients

  • 2 tablespoons olive oil – divided
  • 0.5 lb ground turkey Use lean ground turkey for less fat.
  • 1.5 tablespoons taco seasoning Adjust according to taste.
  • to taste Salt and pepper Adjust seasoning to preference.
  • 3-4 large eggs Use organic eggs if possible.
  • 0.25 cup cottage cheese – 2%-4% Can substitute with cream cheese or a dairy-free alternative.
  • 1 tablespoon butter For cooking the eggs.
  • 1 cup shredded potatoes Like Simply Potatoes.

Optional Toppings

  • Chopped fresh herbs (like chives or parsley) For freshness.
  • Avocado Sliced or diced.
  • Mexican shredded cheese Optional for added flavor.
  • Chopped tomatoes or salsa For a refreshing touch.

Instructions
 

Cook the Ground Turkey

  • Heat a skillet to medium heat on the stovetop with 1/2 tablespoon of olive oil.
  • Add the ground turkey, breaking it up in the pan using a wooden spoon or spatula.
  • Season the meat with taco seasoning and cook until no longer pink, about 5-7 minutes.
  • Taste and adjust the seasoning with salt and pepper as needed.

Prepare the Eggs

  • In a medium-sized bowl, crack the eggs and add the cottage cheese along with a pinch of salt and pepper.
  • Whisk the eggs until fully combined.
  • In a separate skillet heated to medium-low, add the pat of butter, coating the bottom to prevent sticking.
  • Pour the egg mixture into the pan, folding and cooking until firm and fluffy, about 5-6 minutes.
  • Remove from heat and set aside.

Make the Potatoes

  • Using a clean kitchen towel, squeeze the excess moisture from the shredded potatoes.
  • Wipe out the pan used for the meat, and heat the remaining olive oil over medium heat.
  • Add the drained potatoes, sprinkle with salt and pepper, and press them down in the pan.
  • Let the potatoes cook for 4-5 minutes, then break them up and flip.
  • Cook until they are golden brown and crispy, approximately another 5 minutes.

Assemble the Breakfast Bowls

  • Divide the cooked eggs, turkey, and potatoes into two bowls.
  • Top with your choice of optional toppings like fresh herbs, avocado, cheese, tomatoes, or salsa.

Notes
