  • 1 piece low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt Can substitute with sour cream if desired.
  • 2 wedges Laughing Cow cheese
  • 1 tablespoon ranch seasoning
  • 1 spray Cooking spray or oil For cooking the quesadilla.

Preparation

  • In a bowl, mix the shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning until well combined.

Cooking

  • Heat a non-stick skillet over medium heat and lightly spray with cooking spray or add a small amount of oil.
  • Place the low-carb tortilla in the skillet and spread the chicken mixture evenly over half of the tortilla.
  • Fold the tortilla in half and cook until golden brown and crispy, about 3-4 minutes per side.
  • Remove from skillet, cut into wedges, and serve immediately.

Notes

Serve hot, cut into wedges, with a side of fresh veggies or salad. Drizzle with ranch dressing for added flavor. Leftovers can be stored in the fridge for up to 2-3 days.
