Ingredients
  

Pasta

  • 8 oz Dry Macaroni Whole wheat or chickpea pasta can be used

Protein

  • 1 lb Lean Ground Beef Can be swapped with ground turkey or chickpeas

Vegetables

  • 1 cup Chopped White Onion Yellow onion works well as a substitute
  • 2 cloves Minced Garlic Use freshly minced for maximum flavor
  • 2 cups Bell Peppers (Red, Green & Yellow) Use any mix based on preference

Sauce Ingredients

  • 2 tablespoons Butter Olive oil can be used as a healthier alternative
  • 8 oz Light Cream Cheese Regular cream cheese can be used for a richer sauce
  • 1 cup Shredded Mozzarella Any favorite melting cheese can substitute
  • 4 slices Light Cheese Slices Any good melting cheese slice will do

Seasonings

  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Paprika
  • 1/2 teaspoon Chili Flakes Adjust to taste
  • 1/4 cup Fresh Parsley Optional for garnish

Instructions
 

Cooking the Pasta

  • Boil a large pot of salted water and add the dry macaroni. Cook according to package instructions until al dente, usually around 7-9 minutes. Drain and set aside.

Sautéing the Vegetables

  • In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chopped onions and minced garlic, cooking until the onions are translucent and fragrant, approximately 3-4 minutes.

Browning the Meat

  • Add the lean ground beef to the skillet. Season with salt, pepper, paprika, and chili flakes. Cook for 5-7 minutes, breaking it apart with a wooden spoon until browned and fully cooked.

Adding the Peppers

  • Incorporate the chopped bell peppers into the skillet. Stir and cook for an additional 3-4 minutes, until they soften.

Making the Creamy Sauce

  • Reduce heat to low, then add the light cream cheese to the skillet. Stir until melted and fully blended into the meat mixture, creating a creamy sauce.

Combining Ingredients

  • Add the drained macaroni into the skillet with the cream mixture. Toss gently until everything is evenly coated.

Melting the Cheese

  • Sprinkle the shredded mozzarella and top with light cheese slices. Cover the skillet for 2-3 minutes, allowing cheese to melt thoroughly.

Serving

  • Remove from heat and garnish with freshly chopped parsley, if desired. Serve immediately and enjoy!
