  • 8 oz lasagna noodles, broken into pieces Break to desired size for hearty bites.
  • 1 tsp Italian seasoning Brings classic lasagna flavor.
  • Salt and pepper To taste.

Cheese and Garnish

  • 1 cup ricotta cheese Adds creamy richness.
  • 1 cup shredded mozzarella cheese Melty and gooey, a lasagna staple.
  • Fresh basil For garnish.

Instructions
 

Brown the Meat

  • In a large pot, heat over medium. Add the ground turkey or chicken, and cook until browned. Stir in the chopped onion and minced garlic, sautéing until the onion is translucent—about 3-4 minutes.

Bring It All Together

  • Once the meat is browned, stir in the crushed tomatoes and chicken broth. Add the broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a gentle boil and then reduce the heat to simmer for about 25 minutes.

Stir in the Ricotta

  • Just before serving, stir in the creamy ricotta cheese until well combined.

Serve Up

  • Ladle the soup into bowls, topping each with shredded mozzarella cheese and a sprinkle of fresh basil.

Notes

Don’t overcook the noodles; they’ll continue to soften in the broth. Season gradually while cooking to optimize flavor.
