  • 1/4 cup plain Greek yogurt Can substitute with plain yogurt or cottage cheese.
  • 1/2 cup shredded reduced-fat cheddar cheese For a healthier option, use low-fat cheese or skip it.
  • 4 pieces low-calorie whole wheat tortillas Warm before assembling.
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • to taste Salt & pepper

Preparation

  • Shred the cooked chicken breast and place it in a large mixing bowl.
  • In a separate bowl, whisk together the buffalo sauce and Greek yogurt, and stir in garlic powder, smoked paprika, salt, and pepper.
  • Pour the buffalo sauce mixture over the shredded chicken and toss until evenly coated.
  • Warm the tortillas in the microwave for 15-20 seconds to soften.

Assembly

  • Lay a tortilla flat and spoon the buffalo chicken mixture into the center.
  • Sprinkle shredded cheddar cheese and optional toppings on top.
  • Fold the sides of the tortilla inward and roll from the bottom up to secure the filling.

Optional crisping

  • Lightly spray a skillet with cooking spray and grill the burritos seam-side down for 1-2 minutes on each side.

Serving

  • Slice the burritos in half and serve warm.
